Heat chocolate over low heat until melted, stirring constantly. Remove from heat and cool
Stir together flour and baking powder. In a large mixing bowl, combine 1 1/2 cups sugar, oil, milk, vanilla, and melted chocolate. Separate the white of ONE of the eggs from the yolk and set aside. Add the yolk and two remaining eggs to the chocolate mixture. Add flour and beat until well mixed. Cover and chill for 1-2 hours or until easy to handle. Shape dough into 1 inch balls. Place 2 inches apart on an ungreased cookie sheet. Flatten slightly with your fingers. Beat reserved egg white until soft peaks form. Gradually add 2 Tbsp. sugar, beating on high until stiff peaks form. Fold in coconut. Top each flattened ball of dough with 1/2 tsp. of the coconut mixture. Bake in a 373 degree F oven for 10-12 minutes or until cookies are done and tops are lightly brown. Remove and cool.
