Beat the lemonade concentrate with a mixer for 30 seconds. Gradually spoon in the ice cream and mix it in. Fold in the Cool Whip and mix until smooth. Pour into the pie shell and freeze for at least 4 hours. Serve with additional Cool Whip and a sprinkling of lemon zest (the lemon zest is optional)

The bunch of young people around here will make this disappear in about 10 minutes, so if I want a bite of it, I'll have to make two. :-) Maybe a Pink Lemonade One and a plain Lemonade one with a tiny bit of green food coloring. What a pretty dessert this is going to make. I can almost taste it now. Yum!
