Rinse whole lettuce leaves and carefully pat dry. Set aside.
In a medium skillet over high heat, brown the pork in vegetable oil, stirring often and reducing the heat to medium, if necessary. Drain, and set aside to cool.
Cook the onion in the same pan, stirring frequently. Add the garlic, soy sauce, hoisin sauce, ginger and vinegar to the onions, and stir. Stir in chopped water chestnuts, green onions, and sesame oil, and continue cooking until the onions just begin to wilt, about 2 minutes. Add the cooked pork and stir for about a minute.
Spoon equal portions onto each lettuce leaf, wrap the lettuce around the pork burrito style and serve ;-)

Deeli, These sound absolutely delicious and I already put the ingredients on my grocery list. But, can you tell me what butter lettuce is or if it has another name? I think I know, but I'm not sure. Thanks, Kathy
