Shaking Baking Coating Mix

Shaking Baking Coating Mix"
Make your own meat coating mix, or Shake 'n Bake, to control flavors and sodium.
Prep Time: 15 minutes
Total Time: 15 minutes
Ingredients:
4 cups flour
4 cups finely crushed saltine crackers
1/4 cup salt
2 Tbsp. sugar
Preparation:
Mix all dry ingredients together well. Drizzle oil over mixture and mix thoroughly until oil is well distributed and particles are fine. Store mix, refrigerated, in a tightly
covered container. Adjust spices and salt level to your taste and nutritional needs
.
Shake and Bake Chicken
Preheat oven to 350 degrees.
Place 1 cup Homemade Shake and Bake Coating Mix in a shallow bowl. Rinse chicken or fish; pat dry. Dip chicken or fish into beaten egg, buttermilk, milk, or salad dressing to coat, then dip into Homemade Shake and Bake Coating Mix. Place on baking sheet and bake at 350 degrees. Bake 20-30 minutes for boneless chicken or fish strips. Bake one hour for bone-in chicken pieces, until meat thermometer reads 160 degrees.
I use corn meal with a small amount of flour ( or corn muffin mix ) a pinch of salt and pepper and a couple of shakes of paprika. You can add other spices like Italian Seasoning, garlic /onion powder or any you like.Give it a try. GG Vi
Here's one I came up with a few years ago that tastes very, very close to Kraft's Original Shake n Bake. The amount of ingredients listed here makes the exact amount as one Shake n Bake packet; enough to coat 6 to 8 pieces of bone in chicken. I opt to use Panko bread crumbs because Panko makes the coating crispier than corn flakes or bread crumbs (you will find it in the Asain isle of your grocery store).
9 Tbsp. Panko crumbs, slightly crushed
2 tsp all purpose flour
1 tsp salt
1/4 tsp paprika
1/4 tsp sugar
1/4 tsp garlic powder, or more to taste
1/4 tsp onion powder, or more to taste
Combine ingredients well in a small bowl and transfer to a large plastic storage bag.
If baking, preheat oven to 400 degrees; if frying, begin heating oil in a large skillet.
Place two pieces of very slightly moistened chicken in bag, shake until well coated, repeat until all pieces are coated and discard any remaining mixture including the bag. If planning to fry allow coating to set for ten minutes before cooking.
Bake in an ungreased baking dish until cooked through, about 35 to 45 minutes.
Fry until cooked through, about 10 to 12 minutes each side.
