Filling:
Make crust and pat in 8x12 inch glass cake dish. Save a few graham cracker crumbs for top. Cook sugar, water and cornstarch until clear. Add gelatin and cool. Pour 1/2 of cooked mixture on crust, spread with diced peaches, then add remainder of cooked mixture. Spread remainder of crumbs on top. Serve with Cool Whip.
