Original Recipe Yield 8 dozen
Ingredients
1 cup margarine, softened
1 cup vegetable oil
1 cup white sugar
1 cup confectioners' sugar, sifted
2 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups chopped pecans
1/2 cup white sugar for decoration
Directions
1.Preheat oven to 375 degrees F (190 degrees C).
2.In a large bowl, cream together the margarine, vegetable oil, 1 cup white sugar and confectioners' sugar until smooth.
Oh, my favorite cookie! I have always called them Russian Tea Cakes, but they are also known as Mexican Wedding Cookies.
This is from the Better Home and Gardens "New" Cookbook, with the red plaid cover. I was given this copy in about 1991 as my very first cookbook.
1 cup butter
2 1/4 cups all-purpose flour
1/3 cup sugar
1 tsp. vanilla
1 cup chopped pecans
1 cup sifted powdered sugar
In a mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add about half of the flour, the sugar, vanilla, and 1 tablespoon water. Beat until thoroughly combined. Beat in remaining flour. Stir in pecans.
Shape into 1 inch balls or 2 1/2 inch fingers or crescents. Place on an ungreased cookie sheet. Bake in a 325 degree F oven about 20 minutes or until bottoms are lightly browned. Cool cookies on a wire rack. Gently shake cooled cookies in a bag with powdered sugar. Makes about 36.
Here is my oldest son's favorite, but using walnuts.
Bruce's Favorite Sandies
1/4 cup powdered sugar
1 cup butter
2 teaspoons vanilla
2 cups flour
Cream butter and powdered sugar, add flour , water and vanilla
Mix well and roll into small balls.
I make them 2 bites in size.( about the size of a whole walnut )
Bake at 350º for 8-10 minutes or until lightly browned around the edges.
While still warm roll in powdered sugar.
I put the sugar in a small paper sack , add a few cookies at a time and shake gently to coat.
Then repeat a second time when cookies are cooler.
