Brown meat in Dutch Oven, add cut up celery and onions and water to cover by about 1 inch. Bring to boil and lower heat to simmer. Simmer about 1 hour, covered until onions and celery are tender. add soy sauce (about 1/4 cup or more to taste). Turn heat up and bring to boil. Add cornstarch while stirring constantly until thickens. Taste again - add more soy sauce if needed.
Serve over chow mein noodles with rice.
This is my own recipe and very good. I usually use 2 or 3 lean pork chops cut up into quite small pieces. You can use left over beef or chicken. I have made this for years. My family prefers it to restaurant or take out Chow Mein.
