Eggs with a tomato base.
*This is commonly referred to as cilantro in the US.
Add oil to your pan. When heated, add the onion till lightly brown. Add the green chillies and after a minute add the spices and stir not to burn the spices.
Add the tomatoes and let it cook for few minutes whilst stiring you can add a little water if necessary.
Crack the eggs one at a time, keeping the yolks intact cooking in low heat. When cooked, sprinkle curry leaves and coriander leaves. Serve with rice or bread. Thanks!
