Recipes Using Gaspar's Linguica Sausage?

Does anyone have a recipe that has the Portuguese sausage Linguica in it? Have you ever used it in rice?

Linguica is used in jag. I don't have a specific recipe for jag, but I do have one for Kale Soup, using linguica.
Kale Soup
ingredients:
2 lbs. Linguica
2 Packages of frozen kale, chopped
4 carrots, quartered
4 potatoes, quartered
3 medium onions, quartered
1 head of cabbage, quartered
1 can chickpeas
1 can kidney beans
1 tablespoon vinegar
Put all ingredients in a large kettle, add enough water to just cover. Simmer for 2 hours. Let cool, preferably overnight or at least for 2 hours. Reheat. Serve with crusty Portuguese bread.

JAG (PORTUGESE DISH)

2 c. linguica (sausage)
1 lb. slice in 1/4 inch bacon
1 can red kidney beans, drained
4 c. instant white rice
4 c. water
Salt and pepper

1 tsp. garlic powder
1 tsp. onion salt

Step 1: Take linguica cut up in small chunks. Put in pot.

Step 2: Take 1/4 inch slice bacon put in with liguica.

Step 3: Cook linguica and bacon for 20 to 25 minutes on low to medium heat.

Step 4: Add 4 cups of water, salt, pepper, garlic powder and onion salt. Bring to a boil.

Step 5: Add 4 cups of instant rice, and 1 can of drained kidney beans.

Step 6: Take pot off the burner and let it sit for 10 to 15 minutes. Then mix.

Summer Jag

2 pounds linguica
2 large squash
1 bunch of kale
1 can of beans(your choice)
1/4 c cooking oil
2 c long grain white rice
4 c water
1 large onion diced
1/4 c paprika
salt to taste
pepper to taste

Saute onions and diced linguica in dutch oven.

Add water, beans, spices and and bring to rapid boil.

Add rice,kale and squash, lowering flame so rice steams to completion.

Hi Bev,
My Portuguese family made a very simple spaghetti sauce using either Linguica or Chourico. Both made by Gaspar's. I prefer the Chourico because it is a little spicer and has more flavor. But here it is.

1 pkg Linguica or Chourico
2 8oz cans tomato paste
3 16oz cans tomato sauce

Peel skin off of meat and cut into very small pieces into dutch oven. Put enough water to cover meat and still have enough to boil for about 15-20 min. Add tomato sauce and paste. Simmer for 45-50 min. Serve over spaghetti. You can adjust your tomato sauce and paste for varying thickness. Just depends on how you like it. Serves about 4 hungary people with some garlic bread.

I was brought up with portugese cooking. Kale soup with linguica is very good however we always had linguica sandwiches with peppers & onions. I add cheese as well.

The sausage shaped linguica served on a torpedo roll, the patty shaped linguica served on a hamburger bun, grilled as an alternative to burgers. YUM!

PORTUGUESE BEANS

2 Tablespoons Extra Virgin Olive Oil
1 PKG Linguica or Chorico Slice 1/4" thick
1 Large Sweet Yellow Onion
3 Cloves Garlic Crushed
1 22 OZ Can B&M Red Kidney Beans
1/2 Teaspoon Salt
1 Tablespoon Vinigar
Franks Red Hot Sauce as Desired

Heat Oil in Large Sauce Pan on Medium Heat, Add the Garlic Lingucia, Onion and cook stirring occasionaly until Onions are soft and meat is browned.
Add the rest of the ingredients, reduce heat to Med/Low, cover and simmer for about 15 Minutes. Serve with Sour Kraut & Rolls.

LINGUICA CASSAROLE

1 PKG. GASPAR'S LINGUICA
1 Large Yellow Sweet Onion Chopped
2 cups Minute Rice
3 cups hot water
2 Tablespoons of EXTRA VIRGIN OLIVE OIL

Salt and Pepper

Cut Linguica in half lengthwise and then cut them into D shaped slices about 1/4" wide, Heat oil in a large sauce pan and fry Linguica on medium heat. Add onions.
Keep stirring until it is Browned. Then add the rice and slowly poor in the water, stir well and often until it starts to boil, turn off the heat and cover for 5-10 minutes. Remove cover and stir well, add salt and pepper if needed, Serve a side vegetable, green been, sourkraut ect.

Linguica Quiche Recipe

A great quiche recipe with many uses.
1/3 lb. of Linguica or Chourico Skined and Crumbled
2 tbsp. of butter
1/2 cup of chopped onion
1/2 lb. of chopped Swiss cheese
3 eggs, beaten
2 cups of cream
1/2 tsp. of salt
dash of cayenne pepper
1- 9 inch. pie shell
Preheat oven to 450.
Sauté onion in the butter for 5 minutes. Add ground linguica, sauté additional 5 minutes, set aside.
Bake the pie shell for 5 minutes, remove it from the oven and sprinkle linguica mix in it add chopped Swiss Cheese.
Mix together the eggs, cream, salt and cayenne pepper. Strain into the pie shell.
Bake 10 minutes at 450.Reduce heat to 350 and bake until firm. This should take around 20 minutes.

PORTUGUESE TORTA

1/2 PKG GASPAR's LINGUICA or CHOURICO Finely Choped
1 Small Onion Finely Choped
2 Garlic Cloves Choped
4-5 Eggs Beaten
Salt-Prpper to taste
Franks Red Hot Sauce (Optional) after cooked

Combine the above ingredients and pour into a preheated Buttered pan on MED Heat.
Turn heat down to MED/LOW and Fry about 10 minutes or until the Torta looks solid enough to flip over, there should be very little liquid on top. The torta is easier to turn if you cut it into 4 peices before you turn it.
Loosen Torta with sptchular and carfuly turn over, cook for a few minutes.
Serve with Rolls or Toast, you can put between Toast with a slice of Cheese.
You may put Hot Sauce on the Torta After it is cooked.

LINGUICA HASH

1 PKG. Gaspar's Linguica
5 Medium Potatoes peeled and sliced in D shapes 1/4" thick
1 Large Yellow Sweet Onion Chopped
2 Tablespoons Extra Virgin Olive Oil
3 Cups hot water
Salt and Pepper
GREEN BEANS OPTIONAL
Heat oil on medium heat, then add the Linguica. Stir often until browned. Then add the onions and potatoes and stir well, then slowly poor in the water, add salt and pepper and stir often until it starts to boil.
Turn down the heat to Low or Simmer and cover for about 20 minutes until done. Serve with a side vegetable.

Linguica With Potatoes And String Beans Recipe

1 Pkg. of Linguica Cut In 1/4"Coins
3 Cloves of garlic Crushed and Chopped
1 Lg. Sweet Onion Chopped
4 or so Potatoes Cubed
2 Lbs. of fresh string beans ( canned will do in a pinch).
Salt and Pepper to taste
1/2 Teaspoon of crushed red pepper
1 can of tomatoes

Cook Onions, and Garlic in 2 Tbl. Olive Oil on Medium Heat until soft, then tent them in foil. Fry Linguica or Chourico 5 minutes or so on Medium Heat stirring constantly.
Return the Onions and garlic to the Pan, add the can of Tomatoes. Cover with Water and Simmer just to heat through out.
Cut string beans bite size ( or add canned). Add Potatoes and Spices.
Cook until potatoes and beans are done. Of course, if you used the canned string beans, you only have to wait until the potatoes are done.

PORTUGUESE PIZZA

1 Frozen Pizza Crust
1/2 Jar Pizza Sauce
1 Cup Sargento Angel Hair Cheese
1/4 PKG sliced Linguica or Chorico into Coins
1 Small Onion

Spread Sauce over the Crust, then evenly sprinkle the Cheese over the Sauce.
Then evenly spread the meat over the Cheese, and finaly spread the Onion over the meat.
Place on a cookie sheet and cook in a 400 preheated oven for about 12-14 Minutes.
You can use a Frozen Cheese pizza and use their cooking instructions.
If you use a Fresh Crust then cook about 12 minutes.

Use the rest of the sauce within a week or throw it out.

CLAM's WITH GARLIC SAUSAGE, HAM, AND CILANTRO AMEIJOAS NA CATAPLANA

2 Tablespoons Extra Vigin Olive Oil
2 Large Sweet Onions Chopped
3 Galic Cloves Chopped
4 OZ Gaspars Chourico or Linguica Cubed
4 OZ Smoked Ham Cubed
1 Teaspoon Franks Red Hot Sauce
2 LBs Clams or Mussels
1 1/2 Tablespoons Chopped Cilantro
Salt
Heat Oil in a Dutch Oven, and add the Onions and Garlic, cook on MED heat stirring ocassionally until soft.
Stir in the Sausage, Ham, and Hot Sauce, cover and cook gently for 15 Minutes shaking occassionally.
Meanwhile, scrub the Clams and rince under Cold running water
Add the Clams, Cilantro and Salt. Cover and simmer 10-15 Minutes, Shaking the Pan every 3 Minutes ,until the Clams open. Watch the heat.
Serve from the pan or go Online and order a Cataplana Pan, a clam shaped copper cooking pan.

KALE SOUP

1 BUNCH KALE Rinsed
12-14 Cups WATER
1-2 KNORR'S CHICKEN BOUILLON CUBE
6 Large CLOVES GARLIC
4-5 POTATOES Peeled and Cubed
1 PKG GASPAR'S LINGUICA Cut Into1/4" Coins
PEPPER to taste

1. In a Large Stock Pot on MEDIUM HEAT boil the water and the Bouilon, cut the stems off the Kale, use and chop the top 3 inches of the stems into tiny peices and discard the bottom portions.
2. Now in 2-3 leaves at a time roll the Kale tightly and slice into thin strips. Add the Kale and Garlic to the pot and cover, boil slowly for 45 Minutes to 1 Hour.
3. Add the Potatoes to the pot.
4. Slice the Linguica into coins about 1/4" thick and add to the pot. If soup is to thick add several more cups of Water. When the soup begins to boil turn the Heat to Low and cover for 10 to 15 Minutes or until Potatoes are done. It is important not to let the soup boil hard or the meat will loose its flavor.
5. Turn heat off and let the soup rest about 15-20 Minutes to allow the flavors to blend. Serve with Sowflake Roll, Portuguese Rolls, or small Bukie Rolls. The soup should taste a little salty or smokey, you can add a little salt if desiered.

WATERCRESS SOUP

10 Cups Water
1 Knorrs Chicken Bouillon Cube
2 Pkgs. Watercress, washed and Choped
4 Cloves Garlic Choped
1/2 Pkg. Pastina (STARS) Noodles
2 Large Carrots Sliced into D Shapes
1/2 Teaspoon Pepper
2 XLarge Potatoes Peeled and Cubed
2 28 Oz Cans B&M Red Kidney Beans Fat Removed
1-2 Pkg. Gaspars Linguica Sliced 1/4" coins

Boil Water and Bouillon Cube, add Watercress, Carrots, Stars, Garlic, and Pepper.
Cover and Boil 15 minutes on Medium Heat stirring occasionaly.
Remove Cover and add Potatoes, and Boil on Medium to Medium High Heat for 5 Minutes stiring occasionaly.
Add the Linguica, and Beans, Stir well, cover Pan and heat until soup Reboils, and reduce Heat to Medium Low or Simmer for 10 Minutes or until Potatoes or done
Serve with Heated Rolls, Buikie Rolls ect.

Does anyone know the Special bread that it was made from Liquiica, protusccio, eggs that called Falva bread for Easter at Portugal Time. The bakery has it but how to make those bread? lisa H.

I am looking for a recipe that includes linquica and cheese , baked in a flaky bread dough to make a delicious Linquica cheese roll. After baking, it is often split in half, spread with butter and grilled to a golden brown. The bread is soft on the inside and crunchy on the outside. Using store bought frozen dough will not cut it. I hope someone knows how to make these delicious breakfast treats.

use three liguica links
two shallots
three cloves of garlic
2 cans of minced clams
olive oil
salt
pepper
1 cup of white wine
1 lb of angel hair pasta
and have a blast
start with the onions and garlic with olive oil then salt and pepper to taste when the it starts to smell areomatic add the linguica and clams white wine to and simmer for 15 minutes then and half stick butter when melted done and put over pasta.
