Brush or smear the chicken with butter. Brown it under the broiler, skin side up, just until browned; don't cook it through. Put in a deep baking dish that has a lid, skin side down. Dot with a little more butter, and sprinkle with salt and plenty of pepper. Cover all the chicken completely with the onions. There should be plenty! Bake in a 325 degree F oven for 1 3/4 to 2 hours. You'll have really tender, flavorful chicken and the best gravy!

Sounds almost too good to be this easy, but I know it works, and wish I had a chicken cooking right now. Just thinking about how delicious it is over brown rice is making me as hungry as a wolf.
