Spud-Crusted Haddock

This is melt in your mouth delicious. Served with a lettuce salad and you have a wonderful light supper - quick too.

Ingredients:

  • 1/4 cup butter or margarine, melted
  • Advertisement

  • 2/3 cup instant potato flakes
  • 1/2 tsp. lemon pepper
  • 1/4 tsp. onion powder
  • 1/8 tsp. seasoned salt
  • 4 Haddock fillets (about 1 lb.), blotted dry

Directions:

Preheat oven to 400 degrees F. Pour melted butter into shallow medium dish.

Combine all ingredients but the fish into a separate shallow medium dish.

Dip each fillet in butter. Press both sides of each fillet into potato flake mixture until thoroughly coated. Arrange in single layer in greased 9x13 inch pan. Sprinkle any excess potato flake mixture over fillets. Drizzle any excess melted butter over top.

Bake for about 15 minutes until potato mixture is golden and fish flakes easily when tested with fork.
