Spicy Guacamole Dressing

Don't limit this yummy dressing to salads alone! Spoon some on to an omelet or grilled whitefish or whatever else your heart desires.

Ingredients:

  • 1 ripe avocado
  • 1/4 small red onion, chopped
  • 1 tsp. crushed or minced garlic
  • Juice of 2 lemons
  • 1 jalapeno, seeded and chopped
  • 1 Tbsp. packed cilantro leaves
  • 1/3 cup extra virgin olive oil
  • Salt to taste

Directions:

Cut the avocado in half, pit and spoon the flesh into a food processor or blender. Add the onion, garlic, lemon juice, jalapeno and cilantro. While blending, add olive oil in a slow steady stream and continue to process until smooth. Salt to taste and serve.

My husband's mom always buried the avocado seed back into the finished guacamole. Said the seed kept it from turning dark. I don't know if it's true or not. I've never made it, but I like it. Maybe the lemon juice does the same thing. :-)
