Ingredients:

  • 1 large pheasant
  • 3 eggs, beaten
  • 4 cups chicken broth
  • 1 cup mushroom soup
  • 1 onion, chopped
  • 1/2 tsp. each salt and pepper
  • Advertisement

  • 1 1/2 cup celery, chopped
  • 1 1/2 cup grated American cheese
  • 4 cups crackers, crushed

Directions:

Simmer pheasant in salted water until tender; remove meat from bones. Cut meat into small pieces; set aside. Beat eggs; add broth and soup. Add onions, salt, pepper, celery, cheese, and crackers. Add pheasant meat and bake in 9x13 inch pan at 350 degrees F for 1 hour. Makes 9-10 servings.
