Cream butter and sugar. Add egg; stir well. Sift together flour, baking powder, and baking soda; add to cream mixture. Add cinnamon, nuts, and apples. Mixture will appear lumpy. Put in well oiled pan, 8x8 inches. Bake at 350 degrees F about 35 minutes. Serve topped with whipped cream or with ice cream. Double to make long pan (9x13 inch).

This sounds very much like a cake my Mother made called Arkansas Apple Cake. The recipes are very similar but hers could be made into a 9" 2 Layer cake with caramel frosting between the layers and on top and sides, or she'd often make it in a half-sheet pan, and we'd have it for breakfast. Hers also had raisins and applesauce in the recipe, and she always used up the last of the Granny Smith apples.
Your Apple-Pudding Cake is a bit more simple and wouldn't take long to put together once you had the apples and walnuts all chopped. Incidentally, you don't need an electric mixer to make these cakes either. They mix up very well just by hand if you do a good job.

Grease 9x13 inch cake pan. Cream shortening and sugar. Add eggs, 1 at a time. Add remaining ingredients. Bake in 350 degree F oven about 1 hour or until cake loosens from side of pan.
