Wonderful combination of fresh mushrooms and quick cooking barley
Saute mushrooms in butter for about 5 minutes until soft, over med-high heat.
Add barley and stir around until coated and mixed with mushrooms. Add 1/4 cup wine, continue stirring over med-high heat, about 2 minutes.
Add water, bring to boil, reduce heat, cover and cook for 10 minutes. Check the pan periodically to make sure there is enough liquid, pans and cooking times can vary.
Mix well and season with salt and pepper.
