In a large bowl combine chicken, celery, onion, salt, and pepper. Add mayonnaise a tablespoon at a time, until just moistened or until desired consistency. Add pimento or relish if you wish. Gently fold in grapes. Serve on lettuce-lined plates, topped with pecans. If you wish, you can serve with fruit (like they do at the restaurant) or with vegetables, such as carrot sticks, bell pepper slivers, etc., or with crackers on the side.
