To tell if butter is still fresh, cut off a small slice. If the outside is darker than the inside, the butter has oxidized and should be replaced.

I have that happen all the time and still use it. Is it supposed to make you sick or what?
I've had that happen with newly bought butter and luckily we haven't had a problem with using it.
