Do not jar geese! It's totally inhumane! You should be arrested!
I don't have an answer to your question regarding canning geese meat but I had to say that I giggled when I read the post from sucidalady about not jarring geese. Too funny, sorry.
Why not just freeze them? That is much safer than canning them.
