Occasionally I have forgotten to use my coupons at the checkout only to remember them when I get home. I've started highlighting the items that I have coupons for on my shopping list with bright neon highlighters, that way they constantly jog my memory as I read my grocery list.

Sounds like a good idea. I usually write C next to the item but I think highlighted items would be easier, faster and I would notice easier on my shopping list.

I have been putting an asterisk before the item's name, with more than one if such is appropriate. I like your idea as it would be easier to see, but if you can't find your highlighter, the asterisk is also noticeable, or a combination to denote more than one.
I've always circled the items on my shopping list that I have coupons for.
I have found the best way to remember to use my coupons is to write my shopping list on an envelope (I save envelopes from junk mail, bills, etc.) and put the coupons in the envelope. As I am shopping I can add additional coupons to the envelope as I go and have them all ready at check out.
