Coconut Drop Cookies

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 cups flour
  • 2 cups old-fashioned oats

  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 cups flaked coconut
  • 1 cup chopped walnuts

Directions

Preheat oven to 350 degrees F. In a large mixing bowl, cream the shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla.combine the flour, oats, baking powder, baking soda and salt; gradually add to creamed mixture and mix well. Stir in coconut and walnuts.

Drop by rounded tablespoonfuls 3 inches apart onto greased baking sheets. Flatten slightly. Bake at 350 degrees F for 11-14 minutes or until golden brown. Cool for 2 minutes before removing to wire racks. Store in an airtight container.
