Brown ground chuck in big non-stick frying pan with diced onions, diced garlic and diced celery. Add oregano, and both cans of tomato sauce. Add season salt to taste (I like about a teaspoon) and pepper.
Cook on medium until bubbling for about 10 minutes then turn down to low and simmer for 45 minutes to an hour. Taste to see if it is done to suit you after 45 minutes.
Add about 1 cup of water if it thickens too much while simmering and simmer the last 15 minutes after water is added.
Boil pasta 15 minutes before sauce is ready until soft.
