By using fat free cream cheese you get a rich sauce without all the fat and calories, as most creamy sauces call for heavy whipping cream. My kids love it and I sneak in the veggies. I frequently make it for guests and they always ask for the recipe and are surprised at how easy it is.
While boiling pasta, melt cream cheese and tomatoes in a sauce pan on medium. Stir until well blended and cheese is melted. Add vegetables. Drain pasta and rinse. Pour sauce over pasta and serve with hot rolls.
Experiment with variations, such as adding mushrooms and using flavored fire roasted tomatoes.
