Tablet is the "Scottish" version of our fudge. It's a VERY sweet, crumbly, candy type bar.
Place the evaporated milk, sugar, and butter in a large, heavy saucepan. Heat slowly till the sugar has dissolved. Then bring to the boil and boil gently for 25-30 minutes.
When candy is cooked, a teaspoonful dropped in cold water should form a soft ball. Remove from the heat, add the vanilla, and beat till the mixture is thick and creamy, about 8-10 minutes.
Pour into a shallow oiled tin, approx 8x12 inches, and allow to set. Cut into rectangles when cool. If liked, wrap the pieces in colored paper for gifts.
