Preheat oven to 350 degrees F. Brush bread with 3 tablespoons of the olive oil, evenly sprinkle with 1/8 teaspoon salt and 1/8 teaspoon of the pepper, place on a baking sheet and bake until just golden, about 10 minutes.
Meanwhile, heat the remaining olive oil in a skillet; add onions and cook, stirring occasionally, until tender, about 8 minutes. Add vinegar and cook about 30 seconds longer, sprinkle with remaining salt and pepper and cool to room temperature.
Top the crostini evenly with the onions and feta and serve.
