If you damage a varnished surface with ammonia, try applying a thin coat of liquid floor wax to restore the texture and shine. If the first coat is uneven because the wax is soaking in, reapply. If necessary, apply several light coats; don't try to apply a single heavy coat. To smooth a varnished surface roughened by ammonia try rubbing with 0000 grade steel wool, but be careful to lightly hit the high spots only; you don't want to cut through the remaining varnish.
