Preheat oven to 400 degrees F. Spread half of the cream cheese over one of the tortillas and then spread apple sauce over the cream cheese. Evenly sprinkle with half of the cheddar cheese, then evenly sprinkle with brisket and then evenly sprinkle with remaining cheddar. Spread remaining cream cheese on the remaining tortilla and place, cream cheese side down, on top of the filled tortilla, place on a baking sheet and bake until cheddar cheese is melted, about 7 to 9 minutes.
Slice into four to six wedges and serve.

Please pardon my faux paux, Aric! Kosher is simply not something I thought about because even though I was raised Catholic I eat meat when Christmas falls on a Friday. How about we change up the recipe ingredient of beef for salmon and title it Salmon and Applesauce Quesadilla. ;-)
