It's light and yummy!
In a large bowl, make jello according to package directions. Add cream cheese and mix on medium speed with an electric mixer. Stir in pineapple and refrigerate until firm.
The cream cheese will come to the top and the pineapple and jello will form 2 other layers. This is our family's favorite dish that my mom made every holiday.

Do you drain the pineapple?
I should think you'd use the pineapple juice to help make up the jelly, rather than tipping it out and using all water (unless you were trying to watch the sugar component). I'll have to try this! Sounds like a great lowcarb recipe too. And you could substitute peaches or apricot for the pineapple too.
