I often have uneaten cookies or crackers that I don't want to waste by letting them go stale. Any cookie or sweet wafer can be made into pie crust. Cookie crumbs or pie crust mix can be stored in the freezer until desired. These crust variations gives a zip to many classic favorites!
Ingredients:
- 2 cups crushed cookies or crackers
- 1/3 cup sugar
- 6 Tbsp. butter or margarine
- 1/2 tsp. of favorite spice or citrus zest
Directions:
Crushed leftover cookies into crumbs in food processor or by hand (Remove filling from sandwich cookies before crushing). Mix cookie crumbs, sugar, melted butter and any spices you prefer. Press into 8 or 9 inch pie or brownie pan. Bake at 375 degrees F for approximately 7 minutes.
