In a small bowl, combine bean and corn salsa with beef, set aside. Finely shred the queso fresco cheese. It is important to get a fine shred for a better melt. Spread 1/2 cup of shredded cheese evenly over one tortilla. Top cheese evenly with 1/2 cup of beef and salsa mix. Sprinkle another 1/2 cup of cheese over beef and salsa mix followed by another tortilla to form a quesadilla. Repeat with remaining tortillas. Spray large skillet with cooking spray. Heat skillet over medium heat. Lay quesadilla in skillet and cook for 5 - 7 minutes until tortilla is lightly brown and cheese has melted, turning once during cooking. Cut each quesadilla into six wedges. Garnish with1 tsp of salsa and serve.
