I found a peanut butter french toast recipe at Allrecipes, and thought, "Why not stuff them with banana's?" Turned out to be a yummy breakfast treat!
Whisk together milk, eggs, 1/4 cup of the peanut butter, and sugar in a large bowl.
Evenly spread remaining peanut butter on one side of the four slices of bread. Place banana slices on top of 2 of the slices of bread and cover with the other two slices, peanut butter side down on top of bananas, to make two sandwiches.
Heat the butter in a griddle or frying pan over medium heat.
Dunk each side of the sandwiches into egg mixture, allowing mixture to slightly soak into both sides. Place in pan and cook on both sides until golden, about 3 to 4 minutes per side. Place on serving plates, top with powdered sugar, and serve with your favorite French toast condiments.

Sounds absolutely yummy. Wish I had one right now. It's something my 3 daughters would have loved too. They made PB and Miracle Whip sandwiches stuffed with bananas and ate them with big dill pickles. I have no idea which one came up with the idea and when I've asked them, they don't remember either.
Of course, if they didn't have bananas, they just cut the dill pickle into long slices and put them on the PB and MW sandwich. It was one of their "play restaurant" specialties, and was named different things at different times. :-)
When I talk about these things to our son who showed up when the youngest daughter was 16, he thinks he got left out of everything.
I'm sitting here waiting for the "Good Fairy" to bring me my Banana Stuffed Peanut Butter French Toast.
