So simple and makes the best gravy. I often add potatoes and carrots on the bottom and cabbage wedges on the top.
Put potatoes and carrots on the bottom of crock pot, if using. Add roast, salt,pepper, bay leaves and onion. Top with both cans of soup. Add cabbage on top, if using. Cook on low 6-8 hrs. Remove to serving plate and thicken gravy, if desired.

That sounds very tasty! I make one that's similar:
3 lb. pot roast
flour
2 T. oil
1 can cream of mushroom soup
1/2 C. beef broth
1 envelope dry onion soup mix
Coat roast in flour and brown (I also add a couple cloves of garlic to the oil when I brown the roast, but that's completely optional). Place in crockpot and add the other ingredients. Cover and cook on low 6 to 8 hours.
