In large pot over low-medium heat, heat 1 tsp. oil and add celery and pepper. Cook until softened, about 20 minutes.
Meanwhile heat 1 tsp. oil in frying pan over medium heat and add chicken. Season with salt and pepper. Cook until it is not pink, about 15 minutes. Then set aside.
Add diced tomatoes, kidney beans, cayenne pepper, basil, garlic powder, and cumin to your pot and cook for 5 minutes. Shred chicken, add to pot and cook for 20 to 30 minutes.
Serve with sour cream or cheese.
