Last week I made the best soup ever using kale, water, turkey, and chicken bouillon cubes. The only thing I measured was the water, 6 cups, and the cubes, 7. I measured neither the kale or the turkey. Simmered it for awhile. I used Redbor kale and just chopped it up raw. The turkey was scavenged off a carcass. It was one of the best soups I've ever eaten and I had my doubts about it before I made it. I served it with cornbread. Yummy!

Here is our favorite soup recipe. Have some in freezer all the time. You can use Kale or Swiss Chard in it.
Sausage, Bean & Kale Soup (or use Swiss Chard)
1 pound medium-spicy pork sausage (your preference to taste)
2 Tbsp. olive oil
2 carrots, sliced thin
3 stalks celery.sliced thin
1/2 med onion, chopped
2 garlic cloves. minced
4 cups veg broth ( I used chicken, had no veg at time)
1 15 oz. can diced tomatoes
1 15 oz. can northern white beans
1 tsp dried parsley
1/2 tsp dried oregano
2 cups Kale, stems removed and coarsely chopped (could use Swiss Chard or fresh spinach)
Directions:
1. In large pot, sautee carrots, celery onion and garlic in olive oil for a few minutes
2. Add Sausage and cook until no longer pink
3. Stir in rest of ingredients, except Kale
4. Simmer for 1 hour adding Kale the last 10 minutes.
