I have a good and seasoned frying pan (copper bottom), with a heavy plastic handle and I'd like to make fritatta in the oven! How can I protect the handle from the heat?

Wrap the handle with several thicknesses of aluminum foil.
Sounds like you have a good pan. Most handles are good to go into the oven up to 400.
Just make sure you have a pan handle cover when you bring it out of the oven. Habit to grab the handle could be painful!
Buy a different pan to use. Why ruin a good expensive pan you would be sick over.
I've taken a screwdriver and removed the handle. There is usually a metal screw just under the handle against the pan. Easy to replace again.
Wouldn't u have to cover the handle on the shiny side & the dull looking out, i would think if u put the shiny side out it would soften the plastic??
Shiny side out repels heat.
If I have a pan with a plastic handle, can it go into the oven if it's wrapped in foil?
