This recipe is quick, delicious, and good for you.
In a small bowl, mix tuna with mayo, salt and pepper. Dice all of the vegetables and set aside.
Pour some tortilla chips on a plate, and put some tuna mix on top of the chips. Then layer the vegetables, cheese, and sour cream on top of the tuna. Voila! Tuna Nachos.

Nice twist to the recipe :-) I am going to give this a try but I think I'll wait to top with the veggies until after placing the tortilla chips, tuna and cheese under a broiler ;-)
