When a recipe calls for shredded zucchini, do you peel it first or shred with skin? I need help! Thanks.

I've done it both ways and it works out fine.
Ditto...skin on. Remove spots or blemishes first. Skins on gives finished dish a nicer color and more nutrients/fiber too.
Only time you would need to peel it is if you were baking something white and didn't want the specks of green. Personally, I never peel it.
