Wonderful blend of flavors!
Heat the oil in a large skillet over medium high heat. Add the chicken and cook until golden brown, about 5 minutes per side. Remove chicken from skillet. Stir in the garlic, olives, 3 tablespoons parsley, and capers in the skillet, add the wine and bring to a boil. Place chicken in the skillet, reduce the heat to medium low, cover and simmer until the chicken is just cooked through; turning occasionally about 10 minutes. Transfer the chicken to a platter, spoon the sauce over the top, sprinkle with the remaining 1 tablespoon of parsley, and serve.

I'd have to use chicken breasts, but I can almost taste the flavor. Sounds very good. My kids love it when I cook something that goes over mashed potatoes, and this will do it just fine.
