Instead of baking individual potatoes and topping them for our large family, my husband came up with this time saving idea to layer ingredients in a casserole.
Combine potatoes, onion and salt. Cook until done. Drain and press into bottom of 9x13 inch casserole.
Drain broccoli. Pour over potatoes. Cover with cheeses.
Bake at 350 degrees F for about 15 minutes until heated through and cheeses melt. May top each serving with bacon bits and Ranch dressing or sour cream.

Cut baked potatoes into 1 inch cubes. Place half in a greased 9x13 inch baking dish. Sprinkle with half of the salt, pepper and bacon. Top with half of the sour cream and cheeses. Repeat layers. Bake, uncovered, at 350 degrees F for 20 minutes or until cheese is melted. Sprinkle with onions.
