Lemon SnowIn double boiler, soak 1 envelope unflavored gelatin in 2 Tbsp. cold water. Heat to dissolving on low, then turn off but keep warm.

AlmendradoSoak gelatin in cold water. Add boiling water to dissolve; cool mixture. Beat egg whites stiff, but not dry. Gradually add sugar and gelatin mixture alternately to egg whites.
