Vegetarian "Chicken" Enchilada Recipe?When I lived in California, a restaurant near Loma Linda Hospital served the BEST Vegetarian "Chicken" Enchiladas! From what I remember it had flour tortillas rather than corn. It had green chiles and a sour cream/cheese sauce. I would LOVE to have the recipe. It was so delicious. Making Your Own Tofu?Someone asked about how to save money on tofu. It has been 30 years since I last made some, and I have lost the recipe. It was in a book that I no longer have, because I can't digest soy products anymore. I did an email search and found only complicated, exotic-sounding recipes. So I am going to tell you as much as I can remember. It isn't a big deal, but you will have to experiment to get the temperature right. Don't let my vagaries stop you. It only costs the price of a pound of the dry soybeans to try this out.

Vegetable Pate Recipe?Recipe needed for vegetable pate. Years ago, such recipe was in The Virginian-Pilot newspaper (Tidewater, VA). It contained no meat, but was the color of liver pate and tasted exactly like it. Scrumptious! Have searched in vain. It was made in a blender (before the days of food processors), but a processor would work even better.
